<Kiritsuke>
The Kiritsuke knife is, in short, the "all-rounder of traditional Japanese knives." Originally, it referred to a traditional, high-end knife that combined the functions of a "Yanagiba" (used for slicing sashimi) and an "Usuba" (used for cutting vegetables) into a single blade.
It features a unique profile with a sharply angled, diagonal tip (Kiritsuke or sword-shaped). Because of its striking appearance and exceptional practicality, it is incredibly popular not only among professional chefs but also among culinary enthusiasts.
