Kappodo OEM Knife Series

The birth of Kappodo’s first authentic Japanese kitchen knife series. Taking it to the world through joint development with Ohzawa Japanese Sword.

"Kappodo," which shares the spirituality and technical systems of Japanese culinary culture with the world, has completed its first OEM knife series, the "Kappodo OEM Knife Series," in collaboration with the heritage knife manufacturer "Ohzawa Japanese Sword." This special model combines practicality and artistry, fusing culinary philosophy with forging techniques inherited from Japanese sword culture. We bring new value to professional chefs, Japanese cuisine enthusiasts, and culinary researchers around the globe.

■ Main Features of This Series

● Overwhelming Sharpness and Edge Retention: By using high-grade "V10 steel" as the core material and applying a "Super Sub-Zero Treatment (cryogenic processing)" using liquid nitrogen, we have achieved a high-level balance between the stability of the delicate edge and a long-lasting, razor-sharp cut.

● Artisan Beauty Derived from Fine Swords: A mirror-like finish brings out a beautiful Damascus pattern. We offer two lines: the sophisticated "Damascus Plain" and the dynamic "Tsuchime (Hammered) Damascus," which provides excellent food release.

● Traditional "Black Water Buffalo Horn and Ebony Octagonal Handle": Features Kappodo's original octagonal handle. Beyond its elegant beauty, the design is easy to grip and minimizes fatigue even during prolonged use, while enabling delicate blade control.

● 5 Different Models Popular in the Global Culinary Scene: We offer the "Gyuto, Santoku, Nakiri, Petty, and Kiritsuke" to suit cooking environments both in Japan and overseas. The blades feature an original hand engraving symbolizing the spirit of Japanese culture.

■ Limited Production of 300 Pieces Per Model Annually

To maintain uncompromising quality and ensure a precise finish by artisans, we do not engage in mass production; each model is strictly limited to 300 pieces per year. Please enjoy the luxurious experience of owning a piece of Japanese culture and artisan beauty that transcends a mere tool.

Santoku

The Santoku knife is the most commonly used "all-purpose knife" in Japanese households. It was created by combining the strengths of the Western "Gyuto" and the traditional Japanese vegetable knife, the "Nakiri."

The name "Santoku" translates to "three virtues" (or three uses: meat, fish, and vegetables), reflecting its versatile ability to handle most tasks. A single Santoku knife can cover almost all everyday home cooking needs.
