Dolly, the artist who painted the mural at Kappodo, designed patterns of flowers representing the four seasons of Japan. Ms. Yamamoto reproduced these as maki-e on the elegant lacquered handles, while Makoto Kurosaki of Echizen Uchihamono crafted the blades, bringing the flowers to life. It brings splendor and inspiration to the highly seasonal Kappo cuisine.

To faithfully reproduce the depiction of the four seasons designed by artist Dolly, a VG10 blade produced by Traditional Craftsman "Makoto Kurosaki" of Echizen STYLE-K is fitted with a lacquer handle with maki-e decoration created by "Yamaken Woodworks."
The blade uses VG10, a stainless steel which is resistant to rust. It has excellent durability, and the octagonal handle makes it easy to grip with both right or left hand.

A multi-purpose knife commonly used in Japanese households. The blade is thin and can handle vegetables, meat, and fish—all with a single knife, hence the name "santoku" (three virtues). An evolved version of the bunka bōchō.
